Bran Gems
two tbsp. fat 1 egg
two tbsp. natural molasses ½ cup bran
¾ cup milk, enough to fill the cup once the fat and
molasses are place in.
1 cup Graham flour ½ tsp. salt
In a very mixing bowl, beat along the milk, egg, fat, molasses, and salt; stir within the bran and flour, beat thoroughly, then drop into hot oiled gem irons. Bake in an exceedingly moderately hot oven.
Graham Gems
¾ cup unsifted Graham flour 1 egg
1 cup milk or part cream ½ tsp. salt
1 cup sifted whole wheat flour
Beat along the milk, egg, and salt, add the flour, and beat one minute, or till the batter is free from lumps. Pour the batter into a quart measure, and pour it into hot slightly oiled gem irons, filling them level full. two 1/three cups heat milk
¾ cup sifted whole wheat flour
1 yeast cake
? cup brown sugar
1 egg
? cup fat

Dissolve the yeast and sugar within the water, and raise the milk; then add the salt, butter and flour, and whip to a sleek batter; set in an exceedingly pan of heat water to rise.
